Steve Kogler, after many years of study including the work of the French master baker Raymond Calvel, has opened a wholesale commercial bakery on his farm in Ellendale, Delaware. With a new state of the art green facility he is producing breads that are steeped in classic European style and made with the finest natural ingredients available. Although he has mastered the art of producing all French style breads Steve’s true passion is making baguettes.

| “The main goal when making great bread from simple ingredients (flour, water, salt and yeast) is to elicit the maximum flavor from the wheat. This is accomplished by manipulating the time and temperatures when making the dough and the bread is rising. And like any great prepared food, a baguette or an Italian loaf must start with the finest ingredients.”
